I large can salmon(bones and skin removed) or tuna
I medium onion finely chopped
2 cups left over mashed potatoes
1 egg beaten
I quantity prepared breadcrumbs or finely crushed macadamia nuts
Olive oil, for frying
Squish together all ingredients except egg and breadcrumbs or nuts with clean hands until thoroughly mixed.
Roll into ball shapes a bit smaller than a tennis ball.
Roll in beaten egg, then in breadcrumbs.
Heat oil in pan, squish down patties with a spatula as you add them to the pan. Turn when golden brown and cook the other side. Serve immediately. Also great served cold in lunchboxes!
Variations: Add chilli to taste or capers to the fish and potato mixture. Add curry powder, or tumeric to taste for a curried version.
Serve with a salad and fresh lemon wedges.
