This recipe is an old family favourite, especially with roast lamb and very easy.
Onions, sliced and separated into rings.
Freshly made breadcrumbs from a stale loaf
In a shallow casserole or gratin dish, layer sliced tomatoes. Top with a layer of onions. Repeat the layers again, final layer should be of tomatoes.
Top with the fresh breadcrumbs. Dob liberally with butter.
Bake in a moderate oven approximately 180 degrees celsius until golden brown and crisp on top.
Quanities of ingredients depend on how big a dish you make it in and how many you want to serve!
