It is highly economical when you are watching the pennies.
Over at least 3 generations it has been a firm family favourite!
1 quantity cooked spaghetti or other pasta
1 large can Rosella Tomato Soup. (I have tried other brands, but this top quaility Australian icon seems to have the ultimate flavour and texture).
Cook pasta to el dente and drain, returning to original pot.
Dob pasta liberally with butter and gently stir through.
Open can of Rosella Tomato Soup, pour over pasta and gently mix until all pasta is generously covered.
The heat of the pasta warms the soup sauce through.
Serve with grated parmesan or other hard cheese and parsley and loads of freshly ground pepper.
For garlic lovers add a clove or two of crushed garlic to the tomato soup before adding to the pasta for a fabulous garlic fix.
It also works with a can of tuna, sardines or anchovies, and,or capers added at the same time as the tomato soup.
Chopped fresh herbs can be added as either a garnish, or at the same time as the soup.
Serve with a tossed green salad for a more nutritionally balanced meal!
